hi kerrie, my only suggestion would be to follow our recipe and use attractive jars and vessels. if you wanted, you could add spices like red/white peppercorns and star anise to the brine which would look nice and add flavor as well. the method described, what with the soaking of the lemons and the use of boiling water to top up, results in a very clear brine, which showcases the lemons beautifully as shown in the photo.

Great to read how to preserve lemons - we have a thread on RootsChat discussing what a "Lemon Preserver" would have done, and I stumbled accross your page.

I found you guys on Chowhound. What a delightful discovery - Hen Waller AND the Temescal Amity project. Your description of preserving lemons is the most thorough I've seen - I'll be trying this. And I'm going to email the Laurel Neighbors list-serve about a fruit/produce exchange. My plum trees give more fruit than we can eat or can each year (even though they're neglected and not producing as they did the first 3 years we lived here).

There's a local beekeeper two blocks away who sells his honey at The Food Mill. I've told him his bees are all over my rosemary so they are really local to me.

Love your blog.
